Ingredients (mākes 3 servings)
1/2 cup butter, ghee or extrā virgin olive oil (120 ml/ 4 fl oz)
3 lārge egg yolks
1 tbsp lemon juice (15 ml)
3 pork loin chops, bone in (200 g/ 7.1 oz eāch), or use 3 boneless pork chops (150 g / 5.3 oz eāch)
2 tbsp ghee or lārd (30 g/ 1.1 oz)
300 g āspārāgus speārs (10.6 oz)
sālt ānd pepper, to tāste
Instructions
Prepāre the one-minute Hollāndāise. Plāce the butter into ā wide mouthed jār, with enough room for ā hānd blender to fit into. Melt the butter in the microwāve.
ādd the egg yolks ānd the lemon juice. Plāce the hānd blender in the bottom of the jār ānd blitz until well combined, lifting it slowly ās you blend. Tāste ānd seāson, if required......
